Blissfully Baking…



 

…Snickerdoodles!
 
I have never been much of a baker, preferring to spend my time in the kitchen either creating gourmet light lunches or hearty dinners. 
However, after a disastrous attempt at making an apple crumble some weeks back, I decided it was high time I employ my efforts in the sweeter side of life and begin baking more earnestly...

And I’m happy to say I have been enjoying every moment of learning thus far.  Now I find myself browsing through magazines and recipe books for baking inspiration.  I already have a long list of sweet treats I would like to try!  …Now to find the time (and the budget!) to do them…

…And should you be in the mood for creaming butter and sugar and filling your kitchen with appetizing smells today, I have shared the lovely recipe for you below…

These Allspice Snickerdoodles are so delightfully easy to make and would be perfect paired with a cup of tea and a good book.  You could even have the younger children help you make them!

~ Allspice Snickerdoodles

125g butter
200g castor sugar
1 egg, beaten
½ tsp vanilla extract
250g all-purpose flour
1 tsp cream of tartar
½ tsp bicarbonate of soda
Pinch of salt
1 tsp allspice
1 tsp ground ginger
1 tsp cinnamon
2 tbsp granulated sugar

1.  Preheat oven to 200 degrees Celsius.  In a large bowl, cream butter and sugar until light and fluffy.  Add egg and vanilla extract and stir well.
2.  Sift flour, cream of tartar, bicarbonate of soda and salt into a large bowl.  Add to butter mixture and stir well.
3.  Place dough in the fridge for 20 minutes.
4.  Remove from the fridge and roll dough into 48 small balls.
5.  Combine spices with granulated sugar and roll each ball in this mixture.  Arrange on a lined baking sheet at 5cm intervals.  Cookies will melt into shape.
6.  Bake for 10 minutes or until golden brown.  When served, the biscuits should still be soft and chewy.

Oh my...snickerdoodles are certainly a favorite at our house!! ;D So tasty and sweet! Yours look delicious and nice and cinnamony, which are the kind I like bestest. :) Mmmm.....
