The Sunday Tradition - Pancakes

When my dad was still working in Cape Town, my mom came up with the idea of us having pancakes on a Sunday evening. 

We started one Sunday after my dad had left for the week’s work in Cape Town.  My sisters and I were feeling extremely sad.  My mom then said, “Let’s have pancakes and invite Aunty Michelle round to join us!” 

And so our pancake evenings started and has remained to this day!  In the afternoon we have a big lunch and in the evening we have pancakes!!  We always sms Aunty Michelle saying, “Pancakes?  Sit down or take away?”  Almost every week, going on for three or four months now, we have had our traditional pancake evening with Aunty Michelle! 

We look forward to it all week long.  Gabrielle is especially fond of the savoury filling that Aunty Michelle brings.  Sometimes it is a bolognaise sauce, other times a mushroom and spinach!!!

Here is our pancake recipe – tried and tested is not the word!

GRAY’S PANCAKES

400ml cake flour
3 eggs
250ml milk
250ml water
25ml oil
Pinch salt

Place eggs, milk, water and oil in a bowl and blend.  Add flour and salt and blend again.  Pour into a jug and place in the fridge for 30 minutes.

 












The stack of pancakes!!  It takes my mom and I about 40 minutes to fry all of these up!

After coffee, Beth and Gabrielle walk Aunty Michelle home down to her farm – we are neighbours so the walk is quick, taking only 2 minutes or so!!  Aunty Michelle always brings Sadie, her dog – Rebekah and Sadie are best buddies!!

We only have two more weeks to till we move to Bethany Farm!  We are very excited but at the same time also sad.  We will miss Aunty Michelle and pancake night very much!
