Sweetness on Sunday ~ Chocolate Shortbread

 Some weeks ago we had a lovely young family bless us with a delightful visit.
And, as we love any occasion to bake a delicious tea time treat, we thought yummy chocolate shortbread would be just the thing...

Shortbread has always been one of my favourite treats...the melt-in-your mouth texture is perfect and I love how it isn't too sweet...
Shortbread is also wonderfully simple to whip up and so lovely when enjoyed with a steaming cup of English tea...


Chocolate Shortbread

130g cake flour
20g cocoa powder
25g cornflour
50g castor sugar
100g butter

Preheat the oven to 170 degrees Celsius.
Mix the dry ingredients together.  
Rub in the butter with your fingertips until the mixure forms a dough.
Knead well.
Press into a greased loaf tin.
Prick all over with a fork and bake for 45 minutes until firm.
Sprinkle with extra castor sugar and cut into slices.
Cool on a wire rack.

I have never had chocolate shortbread but it sure loks delicious! I am assuming that castor sugar is what we call confectioners or powdered sugar here. That's what it looks like. Too bad I'm trying not to eat sweets or I would have to whip up a batch of this. Have a lovely SUnday...:)

Is it the traditional way to use cornflour in shortbread? It's interesting to see how ingredients you might use and I might use are different, and how we also call things by different names. :) Kind of a neat cultural lesson.

Oh, dearest Kelly-Anne, I too have not heard of chocolate shortbread, but it looks absolutely delicious! My Scottish grandmother made shortbread that had a totally different texture (and recipe), and I loved that. But chocolate is such a treat, and I love your beautiful tea setting! Chocolate shortbread sounds new and wonderful! Why didn't we think of that? Isn't English tea the best ever. I learned to drink tea at the table of a lovely Englishwoman, and I have loved it since that time many years ago.
