This deliciously moist cake is the perfect treat for sunday afternoon tea!
It has a lovely hint of rooibos which is complimented by the zingy lemon zest and juice in the syrup...
This such a simple cake to bake that the little children in your home will quite easily manage assisting you!
For the Cake...
125g Butter
100g Sugar
2 Eggs
240g Cake flour
10 Baking powder
1ml Salt
75g Sultanas or raisins
125ml cold Rooibos tea
For the Syrup...
250ml strong Rooibos tea
Juice and rind of 1 lemon
80g Sugar
Method...
Cream butter and sugar well, then add the eggs one at a time, beating well after each addition. Add sifted dry ingredients and fold in the sultanas or raisins and cold rooibos tea. Spoon into a greased ring or loaf tin and bake at 180 degrees Celsius for about 45 minutes or until done. While the cake is baking make the syrup. Combine the syrup ingredients in a saucepan and heat, stirring often until the sugar has dissolved, then boil rapidly for about 5 minutes. Turn cake out and pour syrup over warm cake. Dust with icing sugar just before serving. Serve with love and enjoy!
