Honey and Muesli Muffins



 Whether you will be stepping out your home early tomorrow morning, or you have guests joining you for tea time, or you simply feel like whipping up something delicious in the kitchen this afternoon, I have the perfect recipe for you to try!
How about some delicious Honey and Muesli muffins…?

 These muffins are soft, moist and flavourful, and the lovely thing is that the recipe calls for very little sugar… 

And what could be nicer than a sprinkling of muesli in a muffin – it adds such a yummy flavour and texture!


Morning Honey and Muesli Muffins…


250g self-raising flour

1tsp baking powder

½ tsp ground ginger (this is entirely optional)

100g muesli

50g dried fruit of your choice, chopped

2 eggs

5tbsp melted butter

50g brown sugar

5tbsp runny honey plus extra for drizzling


Preheat the oven to 180 degrees Celsius.

Line a muffin tray with 12 paper cases.

Sift the flour, baking powder and ginger, if using, into a bowl.

In a separate bowl mix together the muesli and dried fruit.

Add ¾ of the muesli mix to the flour mix, setting the remainder aside.

In another bowl combine all the remaining ingredients until well combined.

Pour the dry ingredients into the wet ingredients and mix until just combined.

Divide the mixture between 12 muffin cases and sprinkle with the remaining muesli.

Bake for 20 minutes or until golden and well risen.

Remove from the oven and drizzle a little extra runny honey over the muffins, then leave to cool on a wire rack.

Serve fresh with plenty of well brewed tea and enjoy!

  3. Mmmm... I could go for one of these right now with my morning coffee :) Isn't baking a delight?! I will tell you something... I would much rather bake than cooke supper. I asked my husband if we could just live on dessert :) haha
